Apple Tapioca - cooking recipe

Ingredients
    1/3 c. quick cooking tapioca
    1 c. firmly packed brown sugar
    1/2 tsp. salt
    1/2 tsp. cinnamon
    4 c. sliced tart apples
    2 c. water
    2 Tbsp. lemon juice
    2 Tbsp. butter
    nutmeg (if you wish)
Preparation
    Combine all ingredients, except nutmeg, in a saucepan.
    Mix lightly and let stand 5 minutes.
    Bring to a boil over medium heat.
    Stir occasionally.
    Reduce heat and simmer until apples are tender, 15 to 20 minutes.
