Oh-So-Garlicky Bread - cooking recipe

Ingredients
    1 c. roasted red peppers, patted dry and chopped (about 2 peppers)
    1/2 c. packed basil leaves, chopped
    2 Tbsp. olive oil
    1 oz. medium-grated Parmesan cheese
    1 (11 oz.) long loaf Italian bread, halved lengthwise
    1 large clove garlic, peeled and halved crosswise
Preparation
    Heat broiler or grill.
    In bowl, combine peppers, basil, oil and cheese.
    Place bread, cut side up, on rack 4-inches from heat source (or cut side down on grill over medium coals); toast 3 minutes or until golden.
    Rub with garlic; top with pepper mixture and return to broiler 2 minutes or until cheese melts.
    Cut crosswise into 8 pieces.
