Fadge(Potato Bread) - cooking recipe

Ingredients
    2 lb. potatoes, peeled and cut into quarters
    1 egg, beaten
    2 to 4 Tbsp. butter
    3 Tbsp. flour
    1 1/2 Tbsp. chopped parsley, chives and lemon thyme, mixed (optional)
    whole milk
    salt and ground pepper
    black pepper
    seasoned flour (flour seasoned with salt and pepper)
    bacon fat or butter (for frying)
Preparation
    Boil potatoes until tender, 15 minutes.
    Drain well.
    Place potatoes in bowl and mash well.
    Add egg, butter, flour and herbs. Mix well.
    Add a few drops of milk if mixture is too stiff.
    Shape dough into 1-inch thick round and slice into 8 pieces.
    Dip in seasoned flour.
    Fry on lightly greased griddle until crusty and golden on one side, 4 to 5 minutes.
    Turn over and cook on other side.
    Serve hot, each wedge topped with pat of butter, if desired.
