Zucchini Relish - cooking recipe

Ingredients
    6 c. ground zucchini (do not peel)
    2 c. ground onions
    2 1/2 Tbsp. salt
    1 1/4 c. vinegar
    3 c. sugar
    1/4 tsp. nutmeg
    1 1/2 tsp. dry mustard
    1/2 tsp. turmeric
    1 Tbsp. cornstarch
    1/4 tsp. pepper
    3/4 tsp. celery seed
    1 each: green and red pepper
Preparation
    Combine zucchini, onions and salt.
    Let set overnight.
    Drain and rinse, then drain again.
    Add remaining ingredients and cook, uncovered, for 30 minutes, stirring occasionally.
    Put in jars and seal.
