Rice Dressing - cooking recipe

Ingredients
    1/2 c. celery, chopped
    1/2 c. onion, chopped
    1/2 tsp. parsley flakes
    1 large bell pepper, chopped
    1/4 c. green onion blades
    1/2 c. cooking oil
    1 1/2 c. rice (not Minute rice)
    2 cans chicken broth (if this is not enough for 3 c., add chicken bouillon cubes)
    salt and pepper to taste
Preparation
    Pour 1/2 cup cooking oil over the first 5 ingredients; simmer until tender.
