Mary'S Roasted Peppers - cooking recipe

Ingredients
    6 firm red peppers
    1/4 c. oil
    1/4 c. vinegar
    4 garlic cloves
    1 Tbsp. chopped parsley
    freshly ground pepper (black)
Preparation
    Place washed peppers on a baking sheet in oven on the top rung. Broil peppers at 500\u00b0.
    As they char, keep turning until almost completely black.
    Remove from oven and let cool.
    Remove core and seeds under running water (the outer skin will come off easily). Slice each pepper into 6 pieces.
    Add all other ingredients and let marinate at least 2 hours.
