Curried Basmati Rice - cooking recipe
Ingredients

1 c. sliced mushrooms
2 onions, chopped
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 c. basmati rice (raw)
1/4 tsp. salt
1 1/2 c. chicken broth
1 1/2 tsp. curry powder
Preparation

Spray a nonstick skillet with cooking spray and heat.
Saute mushrooms, onions and peppers for about 5 minutes or until tender. Add rice, curry, salt and chicken broth.
Bring to boil.
Reduce heat to simmer; cover and cook 20 to 25 minutes until rice is tender.
Serves 4.
