Apricot Upside-Down Cake - cooking recipe
Ingredients

8 3/4 oz. unpeeled apricot halves
milk
1/2 c. packed brown sugar
3 Tbsp. margarine, melted
1 Tbsp. water
1/2 c. flaked coconut
1/3 c. shortening
3/4 c. sugar
1 egg
1 1/2 tsp. vanilla
1 1/2 c. flour
2 1/2 tsp. baking powder
1/4 tsp. salt
Preparation

Drain apricots.
Reserve syrup.
Add milk to syrup to make 2/3 cup.
Set aside.
Combine brown sugar, margarine and water. Spread in 9 x 9-inch pan.
Sprinkle with coconut.
Arrange apricots, cut side up, over coconut.
