Easy Chicken Stew With Scallion Dumplings - cooking recipe

Ingredients
    4 c. good quality canned or homemade chicken stock
    2 1/2 lb. chicken breasts
    6 carrots, peeled and sliced into 1-inch lengths
    1 small onion, thinly sliced
    1 or 2 ribs celery, sliced
    1 bay leaf, broken in 2 pieces
    1 tsp. dry thyme
    salt and pepper to taste
Preparation
    Combine chicken breasts and stock in a large pot; bring to boil over high heat.
    Reduce heat and simmer for at least 10 minutes, but a half hour won't hurt.
    Add the carrots, onion, celery and bay leaf; simmer, partially covered, for 20 minutes. Make Scallion Dumplings as shown.
