Garden Salad With Green Goddess Dressing(Lo-Fat) - cooking recipe

Ingredients
    2 c. low-fat cottage cheese
    1/2 c. nonfat mayonnaise
    2 Tbsp. freshly squeezed lemon juice
    2 Tbsp. grated Parmesan cheese
    1 Tbsp. minced shallots or scallions
    1 Tbsp. fresh parsley
    1 tsp. Dijon mustard
    1/2 tsp. dried tarragon
    1/2 tsp. freshly ground pepper
    1 clove garlic, minced
    6 c. mixed salad greens, torn into bite size
    2 c. thinly sliced carrots
    2 c. bite size broccoli florets
    1 pt. cherry tomatoes, halved
    1 c. sliced mushrooms
Preparation
    In a food processor, puree the cottage cheese 3 minutes or until very smooth. Transfer to a large bowl. Whisk in mayonnaise, lemon juice, Parmesan, shallots or scallions, parsley, mustard, tarragon, pepper and garlic. Cover and refrigerate until needed.
