Chittlings - cooking recipe
Ingredients

10 lb. chittlings
1 large onion, chopped
1 medium bell pepper
salt to taste
1 or 2 cloves garlic
pepper
1/4 c. vinegar
Preparation

Clean
chittlings, removing all fat and dirt.
In large pot, put clean chittlings.
Boil for 30 minutes.
Leave enough liquid so\tthat
chittlings are just covered.
Add seasonings and cook for about 4 hours on low fire.
Serve with cornbread, pickled peppers, greens of your choice and candied yams.
