Peaches And Cream Muffins - cooking recipe
Ingredients

2 c. all-purpose flour
1/2 c. sugar
1 tsp. baking soda
1/8 tsp. salt
2 eggs
1/2 c. sour cream
1/2 c. peach preserves
1/3 c. oil
Preparation

Preheat oven to 400 degrees.
Grease the muffin tin.
In a large bowl, combine flour, sugar, baking soda, and salt.
Stir to mix.
In a medium bowl, beat together the eggs, sour cream, preserves, and oil.
Add to the dry ingredients and stir just until dry ingredients are moistened.
Do not overmix.
Fill muffin cups about 2/3 full.
Bake for 20 to 25 minutes or until a toothpick comes out clean when inserted into center of one of the muffins.
Remove muffins from pan immediately and cool slightly on rack.
Makes 12 muffins.
