Zucchini Bread - cooking recipe
Ingredients

3 c. grated zucchini squash (do not peel)
3 eggs
1 c. cooking oil
2 tsp. vanilla
2 c. sugar
3 c. flour
1 tsp. cinnamon
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 c. raisins
1 1/2 c. chopped walnuts
1 1/2 c. coconut
Preparation

Beat together sugar and eggs until creamy.
Add oil and vanilla and mix.
Add all dry ingredients (sifted together). Add zucchini and mix well.
Add raisins, coconut and nuts.
Bake in a greased and floured pan for 1 hour at 350\u00b0.
Makes 3 loaves.
