Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. sugar
    2 tsp. vanilla
    1 (8 1/2 oz.) can crushed pineapple, drained
    2 c. grated zucchini
    3 c. flour
    2 tsp. baking soda
    1 1/4 tsp. baking powder
    1 1/2 tsp. cinnamon
    1 tsp. salt
    3/4 tsp. nutmeg
    1 c. golden raisins
    1 c. chopped walnuts or pecans
Preparation
    Mix well the first 4 ingredients (eggs, oil, sugar and vanilla).
    Add crushed pineapple and grated zucchini; mix well. Add flour, baking soda, baking powder, salt, cinnamon and nutmeg. Stir in nuts and raisins.
    Pour into 3 medium 4 1/4 x 8 1/2-inch greased bread pans.
    Bake in 350\u00b0 oven for 1 hour.
    This freezes well in foil.
