Garlic Roasted Potatoes - cooking recipe

Ingredients
    3 lb. small red potatoes
    1/4 c. olive oil
    1 1/2 tsp. kosher salt
    1 tsp. black pepper
    2 Tbsp. minced garlic
    2 Tbsp. minced fresh parsley
Preparation
    Preheat oven to 400\u00b0. Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into one layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice during cooking with a spatula in order to ensure even browning. Remove from the oven; toss with the parsley. Season to taste and serve hot.
