Cranberry-Oatmeal Cookies - cooking recipe

Ingredients
    1 1/2 c. unsalted margarine, softened
    1 3/4 c. packed brown sugar
    2 large eggs
    1 1/2 tsp. honey
    2 tsp. vanilla
    1/2 tsp. salt
    2 c. unbleached all-purpose flour
    1 (18 oz.) pkg. rolled oats (5 1/2 c.)
    3 c. (12 oz.) coarsely chopped, fresh cranberries
    1 1/4 c. coarsely chopped walnuts
    1 Tbsp. finely shredded orange peel
Preparation
    Grease or line baking sheet with parchment paper.
    In a large mixing bowl, beat margarine until smooth.
    Add sugar and beat until fluffy.
    Add eggs, honey, vanilla and salt; beat well.
    Add flour; beat until well mixed.
    Add oats and work with hands until well combined.
    Add cranberries, walnuts and orange peel.
    Stir well.
    Shape into ball the size of small egg.
    Place 3 inches apart on baking sheets.
    Press each ball into 3-inch rounds.
    Bake at 350\u00b0 for 15 to 20 minutes or until desired doneness.
    Cool on wire racks.
    Makes approximately 30 cookies.
    Great for Christmas.
