Mediterranean Chicken Salad - cooking recipe
Ingredients

4 chicken breasts (Tyson)
1/2 c. mayonnaise
1 Tbsp. lemon juice
1/2 tsp. Tabasco sauce
1/2 tsp. black pepper (ground)
1 tsp. basil
3 Tbsp. capers
1/2 celery, chopped
1/4 c. sun-dried tomatoes, cut into strips
1 c. cheese (Mozzarella)
1/4 c. olives (black), sliced
4 loaves French bread (mini loaves)
grated Parmesan cheese
Preparation

Boil chicken and cut into bite-size pieces.
In bowl, mix together mayonnaise, lemon juice, Tabasco, black pepper and basil. Mix in chicken, capers, celery, tomatoes, cheese and olives. Slice top off mini loaves lengthwise and hollow to form boats. Brush with melted butter, garlic and parsley.
Broil until golden and toasty.
Fill with salad mixture; sprinkle with Parmesan cheese.
