Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1 apple, peeled and grated
1/2 c. raisins (optional)
1/2 c. shredded coconut
1/2 c. chopped pecans
3 eggs, lightly beaten
1 c. vegetable oil
2 tsp. vanilla
Preparation

Grease 18 muffin cups.
Preheat oven to 350\u00b0.
In a large bowl sift flour, baking soda, sugar, salt and cinnamon.
Add carrots, raisins, apple, nuts and coconut.
In another bowl stir together eggs, oil and vanilla.
Add these to the flour mixture until batter becomes moist.
Fill muffin pans and bake for 30 to 35 minutes.
