Baked Potatoes Florentine - cooking recipe

Ingredients
    4 baking potatoes
    9 oz. pkg. frozen creamed spinach
    2 egg yolks
    1 tsp. salt
    2 slices processed Cheddar cheese
    1/4 tsp. nutmeg
    1/4 tsp. pepper
    1/4 tsp. onion powder
Preparation
    About 1 1/2 hours before serving, bake potatoes 50 to 60 minutes in 450\u00b0 oven.
    Meanwhile, cook spinach as directed on label; drain.
    When potatoes are fork tender, cut lengthwise in half and scoop out pulp.
    With electric mixer, at medium speed, combine potato pulp, egg yolks, salt, pepper, onion powder and nutmeg.
    Beat until very smooth.
    Stir in drained spinach.
    Heap potato mixture back into shells.
    Cut cheese into eight strips, placing 1 on each potato.
    Place on cookie sheet and return to 450\u00b0 oven for 8 to 10 minutes or until cheese is melted and potatoes are hot!
