Carrot Pudding - cooking recipe

Ingredients
    2 lb. carrots, peeled and grated
    1 stick butter
    juice of 1/2 lemon
    3/4 c. sugar
    ground ginger, salt and black pepper
    1 1/2 c. heavy cream
Preparation
    Preheat oven to 350\u00b0.
    In a saucepan, combine the carrots, butter, lemon juice, salt, sugar and a dash of ginger.
    Add just enough water to cover.
    Bring to a boil; reduce the heat.
    Cover and simmer for 30 minutes or until liquid evaporates.
