Black-Eyed Pea Supper Dish - cooking recipe

Ingredients
    1 (15 oz.) can black-eyed peas
    1/2 lb. sausage (I use Jimmy Dean hot!)
    1/2 c. each: green pepper and onion
    1 clove garlic, chopped
    1 c. canned tomatoes, chopped
    1/4 tsp. each: black pepper and oregano
    1/2 to 1 c. grated cheese (I use sharp Cheddar)
Preparation
    Cook sausage, breaking into pieces.
    Drain fat.
    Add green pepper, onion and garlic.
    Cook for 5 to 10 minutes, stirring occasionally.
    Add tomatoes and seasonings.
    Stir well.
    Add black-eyed peas (drain first).
    Cover and simmer slowly for 15 to 20 minutes or until desired consistency is reached.
    Pour in casserole dish and top with grated cheese.
    Warm in oven for 15 minutes at 350\u00b0.
    This is great to make ahead, because it lets the flavors blend.
