Sweet Potato Pie - cooking recipe

Ingredients

4 c. sweet potatoes, mashed
2 c. sugar
3 eggs, separated
1/2 lb. butter
1 can coconut
1 tsp. nutmeg

Preparation

Bake 6 sweet potatoes.
Peel and mash while warm.
Cream butter and sugar well.
Add eggs, one yolk at a time.
Beat well. Add mashed potatoes, coconut and nutmeg.
Fold in stiffly beaten egg whites.
Mix well, but stir lightly.
Put into unbaked pie shell and bake at 375\u00b0 for about 40 minutes.
