Sweet Potato Casserole - cooking recipe

Ingredients
    6 medium sweet potatoes
    1/2 c. firmly packed brown sugar
    2 large eggs
    1 tsp. vanilla
    1/3 c. half-and-half
    1/2 c. butter, melted
Preparation
    Cook sweet potatoes immersed in boiling water for 30 - 45 minutes or until tender. Let cool to touch; peel and mash potatoes. Combine potatoes, brown sugar, and next 4 ingredients; beat at medium speed with an electric mixer until smooth. Spoon into a greased 13 x 9 inch baking dish.
