Chicken Rice Italia - cooking recipe
Ingredients

3 lb. broiler-fryer chicken, cut up, or boneless chicken breasts
1 tsp. oregano leaves, crushed
1 (15 oz.) can Italian tomato sauce
1 c. Uncle Ben's converted rice
2 c. coarsely chopped zucchini or frozen Italian green beans
1 1/3 c. water
1 tsp. salt
shredded Mozzarella cheese
Preparation

Preheat oven to 375\u00b0.
Remove excess fat from chicken; season with salt and oregano.
Remove and put aside 1/4 cup tomato sauce. Combine remaining sauce, rice, zucchini, water and salt in a 12 x 8 x 2-inch baking dish; stir well.
Arrange chicken over rice mixture.
Cover tightly with foil; bake for 1 hour, or until chicken is tender and most of liquid is absorbed.
Spoon reserved sauce over chicken; sprinkle with cheese.
Return to oven for 2 or 3 minutes to melt cheese.
Makes 6 servings (449 calories each).
