Potato Croquettes - cooking recipe
Ingredients

4 large potatoes
2 tsp. butter
1/4 c. grated Parmesan cheese
2 egg yolks
pinch of nutmeg
salt and pepper to taste
2 egg whites
lightly toasted breadcrumbs
oil (for frying)
Preparation

Peel and wash potatoes.
Cut into quarters.
Cook in boiling water until soft.
Drain.
Stand the pan of potatoes over the lowest possible heat and mash finely.
Add butter, cheese, egg yolks, nutmeg, salt and pepper to taste.
When mixture is cool enough to handle, form into cork shapes.
Coat lightly with beaten egg white and crumbs.
Heat oil until a cube of bread dropped into it turns golden in 1 minute and floats to top.
Fry croquettes until golden.
Drain on paper towel.
