Ingredients

2 c. grated zucchini (unpeeled; do not drain liquid)
2 Tbsp. melted butter
1/3 c. flour or more
1/2 tsp. baking powder
2 eggs, beaten
1/2 tsp. salt
1/2 tsp. sugar
1/4 tsp. pepper
1 Tbsp. milk
1/4 c. Parmesan cheese, grated
Preparation

Mix all ingredients in order.
Heat butter in large skillet or griddle.
Pour 1/4 cup batter into skillet; cook until light brown.
Flip; cook second side.
Serve immediately.
Makes about 10 pancakes.
Total cooking time: 5 minutes.
