Potato Puffs - cooking recipe

Ingredients
    2 eggs
    1 c. mashed potatoes
    1/2 c. all-purpose flour
    1 1/2 tsp. baking powder
    1/4 tsp. salt
    oil (for deep fat frying)
Preparation
    In a mixing bowl, beat eggs.
    Add potatoes.
    Combine flour, baking powder and salt.
    Stir into potato mixture.
    In a large saucepan or kettle, heat about 1-inch of oil to 375\u00b0.
    Drop mixture by heaping teaspoonful, four or five at a time into hot oil.
    Fry 2 to 3 minutes, turning once or until golden brown.
    Watch closely since they brown quickly.
    Drain on paper towels.
    Serve immediately.
    Yields 1 1/2 to 2 dozen.
