Cajun Cornbread Skillet Casserole - cooking recipe
Ingredients

2 eggs, beaten
1 c. self-rising cornmeal
1/2 tsp. salt
1 (17 oz.) can cream-style corn
1 c. buttermilk
1/4 c. vegetable oil
1 1/2 lb. ground beef
5 tsp. hot taco sauce
1 pkg. taco mix
1/3 c. water
1 onion, chopped
1 bell pepper, chopped
Preparation

Brown beef in skillet.
Add taco mix, taco sauce and water. Mix eggs, cornmeal, salt, buttermilk, vegetable oil and corn. Grease a 10-inch iron skillet.
Pour half of the cornbread mixture in bottom of pan.
Add onion and bell pepper, then add meat mixture.
Pour remaining cornbread mixture on top. Bake at 350\u00b0 for 45 to 60 minutes.
