Ingredients

1 c. mashed, cooked carrots (about 4)
3/4 c. sugar
1 c. shortening
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
3/4 c. shredded coconut
frosting (for top)
Preparation

Mix carrots, sugar, shortening and eggs.
Stir flour, baking powder and salt in; stir in coconut.
Drop by teaspoonfuls about 2 inches apart onto ungreased cookie sheet.
Bake until almost no indentation remains when touched.
Frost when cool with Orange Butter Frosting which is made by making regular butter frosting with orange juice instead of vanilla.
