Zucchini Bread With Apricots - cooking recipe

Ingredients
    1 c. oil
    3 eggs, beaten
    2 c. sugar
    2 c. unpeeled grated zucchini
    3 c. flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    1/2 c. chopped nuts
    2 tsp. vanilla
    1 c. dried apricots, chopped
Preparation
    Cream the oil, beaten eggs and sugar.
    Add zucchini and mix. Add dry ingredients and mix.
    Add nuts, apricots and vanilla; stir.
    Pour into 2 (9 x 13-inch) pans, which have been greased on the bottoms only. Bake at 325\u00b0 for 60 to 75 minutes.
