Aunt Rose'S Zucchini Bread - cooking recipe

3 c. flour
1 1/2 c. sugar
1 tsp. cinnamon
1 pinch salt
1 tsp. baking powder
1 tsp. baking soda
3 c. shredded, unpeeled zucchini
1 c. raisins
1 c. nuts
3 eggs
2 tsp. vanilla
1 c. oil
Preparation

In a large bowl, mix together the flour, sugar, cinnamon, salt, baking powder, baking soda, zucchini, raisins and nuts.
In another bowl, beat together the eggs, vanilla and oil.
Pour over flour mixture; stir until thoroughly mixed.
Turn into 2 greased loaf pans.
Bake at 350\u00b0 for approximately 1 1/2 hours.
Makes 2 loaves.
