Potato Cakes - cooking recipe

Ingredients
    leftover mashed potatoes (about 3 c.)
    1/2 large onion, chopped
    2 medium eggs, beaten
    salt and pepper to taste
    3/4 c. flour
    vegetable oil (for frying)
Preparation
    Mix potatoes with flour, onion, eggs, salt and pepper. Mixture will resemble bread dough. Add about 1/4-inch oil in skillet. Drop potato mixture from tablespoon. Fry in hot oil until brown on both sides. Drain on paper towel. Goes good with green vegetables.
