Pumpkin Bread - cooking recipe
Ingredients

2 2/3 c. sugar
3 eggs
2/3 c. shortening
2 c. fresh pumpkin (canned pumpkin could be used)
3 c. plain flour
1/2 tsp. baking powder
2 tsp. baking soda
1 1/2 tsp. salt
2 tsp. cinnamon
2/3 c. chopped walnuts or pecans
2/3 c. raisins
2/3 c. water
yellow food coloring (optional)
Preparation

In a large bowl, mix together flour, baking powder, soda, salt and spices.
In another large bowl, mix sugar and shortening until creamy.
Add eggs one at a time.
Add pumpkin and mix well.
Pour flour mixture (slowly) into sugar mixture.
Add water as needed. Beat until thoroughly mixed.
Pour into greased loaf pans.
Bake at 350\u00b0 for 1 hour or until done.
