Grilled Minted Lemon Chicken - cooking recipe
Ingredients

6 boned, skinned chicken breast halves (4 to 6 oz.)
grated rind 2 lemons
juice 3 lemons
1/4 c. fresh mint, chopped
1/3 c. honey
4 Tbsp. soy sauce
salt and ground pepper
Preparation

In a small bowl, mix together the lemon rind, lemon juice, mint, honey, soy sauce, salt and pepper until well blended. Preheat the broiler or grill; arrange breast halves on tray or broiler pan and brush liberally with 2/3 of the sauce.
Grill the chicken on each side, 7 minutes.
Serve immediately.
