Baked Chicken Reuben - cooking recipe

Ingredients
    4 boneless chicken breasts*
    1/4 tsp. salt
    1/8 tsp. pepper
    1 (16 oz.) can sauerkraut, drained, press out excess liquid
    4 slices natural Swiss cheese
    1 1/2 c. bottled Thousand Island salad dressing
    1 Tbsp. chopped parsley
Preparation
    *I use chicken breast quarters with bone.
    Skin and rinse well.
