Hearty Tortellini Soup - cooking recipe
Ingredients

2 cloves garlic, crushed*
1 Tbsp. margarine
2 (13 1/2 oz.) cans chicken broth
1 (8 oz.) pkg. fresh or frozen cheese tortellini
1 (10 oz.) pkg. fresh or frozen spinach, thawed
1 (16 oz.) can stewed tomatoes, coarsely chopped (not drained)
grated Parmesan cheese
1 lb. premade small meatballs
Preparation

In large saucepan over medium-high heat, cook garlic in margarine for 1 to 2 minutes.
Add broth and tortellini with the precooked meatballs and heat to a boil.
Reduce heat; simmer for 10 minutes.
Add spinach and tomatoes; simmer 5 minutes more. Serve topped with cheese.
*Be careful not to burn garlic.
