Jellied Pig'S Feet(Koseliena) - cooking recipe

Ingredients
    4 pig's feet, cut in half
    4 pork shanks
    1 veal shank
    2 onions
    1 tsp. salt or more to taste
    6 whole peppercorns
    6 whole allspice
    3 stalks celery
Preparation
    Wash meat; put into a large pot and cover with water.
    Bring to a boiling point and skim.
    Add remaining ingredients and simmer slowly, about 3 to 4 hours until meat is done and comes off the bones.
    Cool, strain, remove bones and spices.
    Return meat to liquid; add pepper, 1/2 clove of garlic, minced and more salt if desired to suit your taste.
    Pour into loaf pan.
    Refrigerate until firm.
    Scrape fat from the top before serving.
