Potatoes In Beef Jackets - cooking recipe

Ingredients
    12 small potatoes
    1 lb. ground beef
    1 egg
    1 1/2 tsp. salt
    1/4 tsp. pepper
    2 c. tomato juice
    1 large onion, chopped
    1 green pepper, chopped
Preparation
    Cook potatoes in skins until almost tender and then remove skins.
    Mix ground beef, egg, salt and pepper.
    Cover each potato with hamburger, pressing well.
    Place balls in greased 9 x 13-inch casserole.
    Pour tomato juice over balls and top with onions and peppers.
    Bake at 350\u00b0 until meat is done and potatoes tender. Serves 6 to 8.
