Diet Pineapple Upside-Down Cake - cooking recipe

1 (8 oz.) can crushed pineapple, drained (reserve juice)
1/2 c. brown sugar
6 maraschino cherries
1 1/2 c. all-purpose flour
2 Tbsp. baking powder
1/4 tsp. salt
1/2 c. applesauce
1 c. sugar
3 egg whites
Preparation

Preheat oven to 400\u00b0.
Spray an 8 x 8 x 2-inch pan.
Drain crushed pineapple, reserving juice.
Sprinkle brown sugar onto bottom of pan.
Top with an even layer of crushed pineapple. Slice cherries in half; arrange, cut side up, in pan.
In medium bowl, combine flour, baking powder and salt; set aside.
In a large bowl, mix applesauce, sugar, reserved pineapple juice and egg whites.
Add flour mixture; mix just to blend.
Gently pour batter over pineapple.
Bake for 30 to 40 minutes.
Cool 10 minutes.
Invert cake onto serving dish and cool completely. Makes 8 servings.
