Ingredients

1 c. shortening (part butter)
1 c. granulated sugar
2 eggs
2 tsp. lemon extract
4 tsp. grated lemon rind
2 1/4 c. sifted flour
1/2 tsp. baking soda
1 tsp. salt
1 c. lemon custard chips
1 c. chopped pecans
Preparation

Mix together thoroughly the shortening, sugar, eggs, extract and lemon rind. Sift flour, soda and salt; stir into the first mixture. Then add chopped nuts and lemon chips. Drop by rounded teaspoonful 2-inches apart on lightly greased cookie sheet. Bake at 375\u00b0 for 10 to 12 minutes or until lightly browned. Cool slightly and remove from cookie sheet. Yields about 6 dozen.
