Chitterlings - cooking recipe

Ingredients
    10 lb. chitterlings
    2 medium onions, quartered
    2 stalks celery
    2 bay leaves
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. crushed red pepper
    vinegar to taste
Preparation
    Wash chitterlings in
    warm
    water, rubbing as you would clothes, to remove\tall grease and residue.
    Strip as much fat as possible from
    each
    piece\tand
    wash
    in clear cold water. Drain and wash
    again
    holding
    each
    piece under cold running water (chitterlings
    must
    be
    thoroughly
    cleaned).
    Place in large pot, cover with
    water and bring to a boil, drain, cover with fresh
    water.
    Add\tremaining
    ingredients.
    Cook covered over medium heat until
    done,
    about 4 to 4 1/2 hours.
    Drain, cut into small pieces and serve with hot sauce.
