Golden Potato Bake - cooking recipe

Ingredients
    1/3 c. sour cream
    2 Tbsp. half and half (blend of cream and milk)
    2 oz. Cheddar cheese, shredded
    1/4 c. chopped scallions (green onions)
    1 tsp. chopped fresh parsley
    dash of white pepper
    3/4 lb. pared cooked all-purpose potatoes, grated
    2 tsp. margarine, melted
    1 Tbsp. plain dried breadcrumbs
    1 tsp. grated Parmesan cheese
Preparation
    Preheat oven to 450\u00b0.
    In small saucepan combine sour cream and half and half and cook over medium heat until heated through (do not boil).
    Stir in Cheddar cheese, scallions, parsley and pepper and continue cooking, stirring frequently, until cheese melts.
    In medium mixing bowl combine potatoes and cheese mixture and mix well.
    Spread margarine over bottom of 9-inch pie pan; turn potato mixture into pie pan and spread evenly over bottom of pan.
    In cup or small bowl combine breadcrumbs and Parmesan cheese; sprinkle over potato mixture.
    Bake until potato mixture is heated through, 20 to 25 minutes.
    Turn oven control to broil, and broil until topping is lightly browned, 1 to 2 minutes.
    Makes 4 servings.
