Eggplant Casserole - cooking recipe

Ingredients
    1 1/2 lb. eggplant, diced
    3 onions, chopped
    2 Tbsp. butter
    2 egg yolks, beaten
    1/2 c. grated Parmesan cheese
    1 tsp. salt
    1 c. dry bread crumbs
Preparation
    Place vegetables in boiling water; cover and boil for about 20 minutes.
    Drain.
    Add remaining ingredients and pour into greased casserole dish.
    Bake in moderate oven (350\u00b0) for 30 minutes or until brown.
