Potatoes Whipped With Cheese - cooking recipe

Ingredients
    3 lb. potatoes, cooked and whipped
    1/4 lb. butter
    6 oz. cream cheese
    1 green pepper, chopped
    1 bunch scallions, sliced
    1 small can pimiento with juice
    1/2 c. Cheddar cheese, grated
    1/2 c. Parmesan cheese, grated
    1/4 tsp. saffron
    cream (optional)
Preparation
    Lightly salt potatoes.
    Blend in the next 8 ingredients, beating constantly.
    The mixture should be fairly moist.
    If not, add a bit of cream and more butter.
    Pile into an ovenproof serving dish and bake, uncovered, at 350\u00b0 for 30 minutes.
