Chicken And Cashews - cooking recipe

Ingredients
    1 lb. chicken parts
    4 c. cooked white rice
    1/3 c. peanut oil
    1/4 c. sesame oil
    1/4 c. soy sauce
    2 scallions, chopped
    1/2 c. cashews
Preparation
    Cook chicken (boil in large pot).
    Remove when done and pull off bone.
    Reserve 2 tablespoons liquid.
    Pull off skin and shred chicken.
    Heat oils and soy sauce in a large skillet.
    Add chicken; heat through and add scallions, broth and nuts.
    Cook until hot.
    Serve over hot cooked rice.
    Serves 4.
