Flounder Au Gratin With Mushrooms - cooking recipe
Ingredients

1 lb. fresh flounder fillets or 16 oz. frozen, thawed
1/2 lb. fresh mushrooms, sliced
1 Tbsp. butter
1 Tbsp. fresh lemon juice
1/4 c. chopped parsley
salt and pepper to taste
1/2 Tbsp. flour
3/4 c. heavy cream or milk for low calorie
1 1/2 Tbsp. sherry
1 Tbsp. grated Parmesan
2 Tbsp. fine bread crumbs

Preparation

Sprinkle fish with salt and pepper and arrange in shallow baking dish.
Sprinkle with parsley.
Melt butter; add and blend lemon juice, then add mushrooms and saute over low heat 10 to 12 minutes, stirring occasionally.
Blend in flour, then add cream gradually and simmer until thickened, stirring constantly.
Simmer 10 minutes more, stirring occasionally.
Add sherry and pinch of salt and pepper.
Pour sauce over fish and sprinkle with cheese, then bread crumbs and a dash of paprika.
Bake 20 minutes at 450\u00b0 or until fish is no longer transparent and flakes easily and top is nicely browned.
