Spiced Zucchini Bread - cooking recipe

3 c. plain flour
2 tsp. soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 c. chopped pecans or walnuts
3 eggs
2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 c. coarsely shredded zucchini
1 (8 oz.) can crushed pineapple, drained
Preparation

Combine flour, soda, salt, baking powder, cinnamon and nuts; set aside.
Beat eggs lightly in a large bowl; add sugar, oil and vanilla and beat until creamy.
Stir in zucchini and pineapple. Add dry ingredients, stirring only until moistened.
Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans.
Bake at 350\u00b0 for 1 hour.
Cool 10 minutes in pan; turn out on rack to cool completely.
