Zucchini Fritters - cooking recipe

Ingredients
    3 large eggs
    1/4 c. all-purpose flour, unsifted
    2 Tbsp. grated onion
    1 medium green zucchini, shredded
    1 medium yellow squash, shredded
    1 large carrot, pared and shredded
    1/8 tsp. pepper
    1/4 tsp. salt
    1/4 c. oil
Preparation
    In large bowl, beat eggs, flour, onions, salt and pepper.
    Stir in vegetables.
    In large skillet, heat 1/4 cup oil.
    Drop batter by tablespoons into hot oil.
    Cook about 1 minute on each side or until golden brown.
    Drain on paper towel.
    Serve hot with Red Pepper Mayonnaise.
