Meal-In-A-Muffin - cooking recipe

Ingredients
    1 medium carrot
    1 large Granny Smith, quartered and cored
    1/2 c. vegetable oil
    2 large eggs
    1/3 c. sugar
    2 tsp. vanilla extract
    1/2 c. shredded coconut
    1/3 c. raisins
    1/2 c. pecan halves
    3/4 c. whole wheat flour
    1/2 c. rolled oats
    3 Tbsp. wheat germ
    1 tsp. baking soda
    3/4 tsp. cinnamon
    1/2 tsp. baking powder
    1/4 tsp. salt
    1/4 tsp. ground ginger
    1/8 tsp. freshly grated nutmeg
Preparation
    Preheat oven to 375\u00b0.
    Shred carrot and apple in food processor.
    Set aside.
    Process the oil, eggs, sugar and vanilla until well blended.
    Add the carrot, apple and remaining ingredients.
    Divide the batter among greased muffin tins, filling them 3/4 full and bake in preheated oven until a cake tester inserted in the center comes out clean.
    Makes 12 muffins.
