Pumpkin Bread - cooking recipe

Ingredients
    2 c. cooked pumpkin, mashed
    1 c. cooking oil
    3 c. sugar
    4 large eggs
    3 1/2 c. plain flour
    1/2 tsp. salt
    2 tsp. soda
    1 Tbsp. cinnamon
    2 c. chopped pecans
    1 Tbsp. vanilla
Preparation
    Cream sugar
    and
    oil.
    Add
    eggs, one at a time.
    Sift dry ingredients.
    Add
    to
    mixture, alternating with pumpkin. Add nuts and
    vanilla.
    Grease
    and flour loaf pans.
    Makes 3 regular loaves or 12 mini loaves.
    Bake large loaves for 45 to 50 minutes. The small loaves take 20 to 25 minutes.
